i used UTF-8 charset for every post pages.

but somedays i found some chinese character messy code -- Gibberish

Make sure you have followed all miniBB modifications to enable it working in UTF-8 mode.

Also in this thread I've mentioned how to check if you run the database itself in UTF-8. You need to be sure on it.
